Fiesta Dish




I love eating almost as much as I love cooking, and while I am not the best in the kitchen, I also like to think I'm not the worst. I was born into a Hispanic family and food just comes with the package. I learned a thing or two about Mexican food, although I can't always eat original recipes because they are deliciously fattening in some cases, I decided to modify some meals. This is one of my go-to meals as lunch or dinner, super easy and practical.

Ingredients:
  • Sprouts 
  • Black or pinto beans (your choice)
  • Cilantro
  • Salsa of choice 
  • Avocado
  • Rice
  • Chicken
*The chicken was marinated a night before with lime, crushed red pepper, coconut oil, salt and pepper.

Me encanta comer casi tanto como me gusta cocinar, y aunque no soy la mejor para eso de la cocina, tampoco me considero la peor. Vengo de una familia Hispana y la comida viene con el paquete. He aprendido un par de cosas sobre la comida Mexicana, y es mi favorita, pero tengo que modificar algunas recetas para que no sean tan deliciosamente grasosa. Esta es una de mis favoritas- super fácil y practica. 

Ingredientes:
  • Retoños de vegetales
  • Frijoles negros o pintos (tu opción)
  • Cilantro
  • Chile en salsa
  • Aguacate
  • Arroz
  • Pollo 
*El pollo lo deje marinando desde una noche anterior para que quede sabroso con limón, ají picante, aceite de coco, sal y pimienta.
